Sanuja Sainudheen takes you on a nostalgic trip with her recipe for Kerala Bakery Bun.
If you miss the taste of authentic Kerala Bakery Buns, here is my easy recipe. My recipe below follows this perfectly. It’s so much easier and, trust me, the scent of fresh bun baking will make everyone really, really excited.
Ingredients
Lukewarm milk - 1 cup
Sugar - 4 tbsp
Instant OR active dry yeast - 2 tsp
1 egg or ¼ cup milk
All-purpose flour - 2 ½ cup
Salt - ½ tsp
Vegetable or canola oil - 1/4 cup
Milk powder - 2 tbsp (optional)
Method of preparation
Combine lukewarm milk (1 cup), instant OR active dry yeast (2 tsp) and 4 tbsp of the granulated sugar in your mixing bowl. Give it a quick stir and then let it sit for 10 minutes in a warm place. You’ll begin to see the yeast froth up until it covers the entire surface of the water.
Add one egg or 1/4 cup milk into the yeast mixture and mix well.
Combine all-purpose flour (2 1/2 cup),1/2 tsp salt and 2 tbsp milk powder (optional).
Add the dry ingredients to the yeast mix. Combine well. Knead the dough by adding the vegetable oil (1/4 cup).
Cover it using a damp cloth and keep it aside for 2 hours in a warm area. Note: If your house is cool, your bread will take longer to rise. In the wintertime when my house is cooler than normal, I like to turn the oven on for 2-3 minutes, then turn it off and let the bowl of dough rise in there. The oven traps the heat for a long time and it’s the perfect atmosphere for rising dough.
After 2 hours, we can see the dough has doubled its size. Punch the dough down and make 6-8 balls.
Spread some oil on a baking pan.
Place the balls and leave it in a warm place for thirty minutes. The second rise will help shape your bun and takes about 30 minutes.
After 30 minutes we can see the balls doubled its size and is the perfect size for the bun.
Spread some milk on top and put some sesame seeds for garnishing.
Bake in a preheated oven with the temperature set to180 degrees Celsius or 355 degrees Fahrenheit for 20-25 minutes until the surface is light golden colour.
Take it out of the oven and let cool for 30 minutes.
You will get your soft and delicious bakery bun. Enjoy with a cup of chai tea!
