Nombu Kanji; a fragrant flavorful porridge that can be found in almost any mosque and Muslim household during Ramadan in Tamil Nadu. It can be quickly put together and is extremely filling despite being light on the stomach, making it the perfect Ifthar meal.
Here’s how you can make Nombu Kanji:
Ingredients:
Basmati Rice/ Jeeraka Shaala - ¾ cup
Moong Dal - ½ cup
Mutton Keema/Finely Chopped Meat - 100 g
Oil - 4 Tbsps
Ghee - 3 Tbsps
Cinnamon Stick - 1
Clove - 3
Cardamom - 3
Cumin Seeds -1 Tbsp
Fenugreek -½ Tbsp
Shallots - 8-10
Ginger Garlic Paste - 1 Tbsp
Green Chilli - 4
Mint & Coriander - 1 Handful
Tomato - ½
Water - 4 cups
Coconut Milk - 1 cup
Directions:
1. Soak the rice and Dal in water for 15 minutes.
2. Heat a Soup pot or a cooker and add the oil and ghee to it.
3. Temper the cinnamon, clove, cardamom, cumin seeds and fenugreek in the oil.
4. Now add shallots to it and saute until light brown.
5. Now add the ginger garlic paste and saute until the raw smell of the paste is completely gone.
6. Now add the minced meat ( wash it well before you add it) and sauté it for a while.
7. Now add chilli, mint, coriander and tomato to the pot and saute for a minute.
8. To this mixture, add the soaked rice and Dal.
9. Add 4 cups of water and add salt to taste.
10. Now close the lid and let the mixture simmer until the rice and dal are well cooked ( 3 whistles on a pressure cooker).
11. Finally, add coconut milk and bring the mixture to a boil.
12. If needed add pepper to taste!
And that’s how you make Nombu Kanji!
