Ras Malai

Shayista Abdulla shares an unbelievably easy - and equally tasty - Ras Malai recipe!

I am not a huge fan of sweets, however as a child I always loved my mom's Ras Malai. It is not like the one we get from the store. It has a unique and rich flavour. This desert is something I have learned from my mom and its absolutely mouth-watering and very easy to make. Its been a huge hit among my friends circle.


Ingredients and method for the dough:

  • 1 cup Nido milk powder

  • 1 egg

  • 1 tsp baking powder

  1. Mix the Nido milk powder and the baking powder.

  2. Add the egg.

  3. Mix well with your hands to make a soft dough.

  4. Make tiny balls.

Ingredients and method for the sauce:

  • 5 cup water

  • 10 tbsp Nido milk powder

  • 7 tbsp sugar

  • 5-6 cardamon

  1. Boil the water on high flame.

  2. Add to it the Nido milk powder. Make sure no lumps are formed. Keep stirring so that the milk does not get stuck to the pan.

  3. Add the cardamon

  4. While the milk is boiling, add the small balls into it.

  5. Reduce flame, and let it keep boiling. Stir frequently. The balls will become double the size and will turn sides. Let it boil on low flame for 8-10 mins. Be careful - the milk should not spill.

Final touch up

  • 1/2 tsp vanilla essence

  • 2-3 strips saffron

  • Pista and almonds halved

  1. When the Ras Mali is cooled, add vanilla essence

  2. Garnish with saffron, pista and almonds

  3. Let it cool completely and refrigerate.

The delicious, flavourful Ras Malai is ready to be served.
